Sweet Potato Soup
A delightful combination of apple, carrot, and onion round out the sweet potato in this satisfying soup.
Ingredients
- 45 g (¼ small) onion, peeled
- 540 g (2 ) sweet potato, cooked
- 200 g (1 medium) apple, seeded, halved
- 200 g (1 medium) carrot
- 720 ml (3 cups) vegetable broth
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes 45 seconds.
Chef's Notes
- Raw onion can be overpowering; if you would like a richer flavor, sauté the onion before blending.Adding cinnamon, nutmeg and other spices creates richness. No need to add sweeteners to this soup as the apple brings a natural whole food sweetness.

- 200 g (1 Tablespoon) medium apple, halved, seeded
- 200 g (1 Tablespoon) medium carrot
- 720 ml (3 cups) vegetable broth

- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 6 minutes, or until heavy steam escapes from the vented lid. Serve immediately.

- 100 g (½ medium) apple, seeded
- 100 g (1 medium) carrot
- 360 ml (1 ½ cups) vegetable broth

- Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 7 minutes 30 seconds.
