Guacamole

This traditional Mexican avocado dip, now an international favorite, makes a quick and easy appetizer for guests.

Ingredients

  • 110 g (2 ) roma tomatoes
  • 20 g (1 cup) fresh cilantro leaves
  • 80 g (1 small) onion, peeled, halved
  • (1 ) lime, peeled
  • (2 teaspoons) salt, optional
  • 540 g (4 ) avocados, pitted, peeled

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to Variable 4-8 depending on desired consistency, using the tamper to press ingredients toward the blades. Blend for 15-20 seconds.

Chef's Notes

For a chunky style guacamole pulse the ingredients or blend on a lower variable speed. For a smooth guacamole, blend on a higher variable speed.

  • (1 ⅓ Tablespoons) lime juice
  • (½ teaspoon) salt, optional

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the blade base.
  2. Select Variable 5.
  3. Pulse the machine 8-10 times, leaving dip rather chunky.

  • Serve with fresh vegetables, tortilla chips, or use as a spread.

  • (1 Tablespoon) onion, chopped
  • (2 teaspoons) lime juice
  • (¼ teaspoon) salt, optional

  2. Select Variable 5.  Pulse the machine 8-10 times, leaving dip rather chunky.
