Pineapple Salsa
Pineapple adds a burst of color and flavor to this salsa. You can serve it hot or mild with blue corn chips, or as a topping on grilled fish.
Ingredients
- 30 ml (2 Tablespoons) extra virgin olive oil, optional
- 300 g (¼ ) pineapple, peeled, cut into large chunks
- 80 g (½ small) white onion, peeled, halved
- 150 g (1 ) red bell pepper, seeded, cut into large chunks
- (2 Tablespoons) fresh cilantro leaves, packed
- (½ ) lime, peeled
- 15 g (1 small) jalapeño, seeded if desired
- (½ teaspoon) kosher salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 3. Pulse 10 to 20 times using the tamper to press ingredients towards the blades, until desired consistency is reached.
