Pineapple Freeze
This vegan pineapple "ice cream" makes it easy to enjoy the flavors you love.
Ingredients
- 680 g (1 ½ pounds) frozen pineapple chunks
- 360 ml (1 ½ cups) soft tofu
- (½ ) lime, peeled
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 30 - 45 seconds or until desired consistency is reached, using the tamper to press ingredients towards the blades. Serve immediately.
Chef's Notes
- Optionally, you can add in 1 frozen, sliced banana to create an even sweeter tropical-style freeze.Tofu makes for a creamy mouth feel… nutritionally it’s going to add protein, healthy fat and isoflavones and phytoestrogen that both have a whole host of health benefits.
