Tomato Vinaigrette
Simple. Delicious. And perfect for any fresh salad you’re serving to family or guests. Plus, you can make ahead and store right in the blending container in the refrigerator for later use!
Ingredients
- 30 ml (2 Tablespoons) red wine vinegar
- (1 teaspoon) honey
- (⅛ teaspoon) ground black pepper
- (¼ teaspoon) salt, optional
- (1 teaspoon) shallot
- 140 g (1 ) roma tomato
- 80 ml (⅓ cup) extra virgin olive oil
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the blade base.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30-40 seconds.

- 45 ml (3 Tablespoons) extra virgin olive oil
Directions
- Place all ingredients into the Vitamix container in the order listed and secure blade base.

- (2 teaspoons) shallot
- 160 ml (⅔ cup) extra virgin olive oil
Directions
- Place all ingredients except the oil into the Vitamix container in the order listed except the olive oil and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 35 seconds. Reduce the speed to Variable 4. Remove the lid plug and slowly add the oil through the lid plug until emulsified.

- (4 teaspoons) shallot
- 300 ml (1 ¼ cups) extra virgin olive oil
Directions
- Place all ingredients except the oil into the Vitamix container in the order listed except the olive oil and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 35 seconds, using the tamper to push ingredients toward the blades. Reduce the speed to Variable 4. Remove the lid plug and slowly add the oil through the lid plug until emulsified.
