Sweet Potato Au Gratin

Sweet potatoes add color and a nutritional boost, while garlic gives a burst of flavor to this delicious dish.

Ingredients

  • 720 g (3 cups) heavy cream
  • teaspoon (1 ) fresh rosemary
  • 200 g (2 cups) smoked gouda cheese, shredded
  • 30 g (¼ cup) onion, chopped
  • (1 ) garlic clove
  • zest of 1/2 lemon
  • 2 tsp Winter Spice Seasoning
  • (⅛ teaspoon) ground cayenne pepper
  • 40 g (3 Tablespoons) butter
  • ml (3 Tablespoons) all-purpose flour
  • 1.3 kg (4 ) sweet potato, sliced 1/8" thick
  • 1/2 cup Brown Sugar Glaze

Directions

  1. Preheat oven to 350°F.
  2. Place garlic, onion, cream, Gouda, fresh rosemary, lemon zest, seasonings, butter and flour into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1 and press Start.  Quickly increase to Variable 10 and blend for 15 seconds (Sauce will be very thick when finished.)
  4. Spread a ½ cup of sauce into the bottom of a baking dish and add in one layer of sweet potato slices. Spread another 1 cup of sauce on top.
  5. Continue layering sauce and sweet potatoes until all ingredients are used up.
  6. Bake at 350°F for 35 minutes then remove from oven and top with Brown Sugar Glaze.
  7. Bake an additional 15 – 20 minutes.
