Peach Bellini
With a fresh peach, peach schnapps, and champagne, this Venice native is one of Italys most popular cocktails. Garnish with a peach slice or cherry.
Ingredients
- 120 ml (½ cup) water
- (1 Tablespoon) fresh lemon juice
- 60 g (10 ) dates [or alternative sweetener], pitted
- 455 g (1 pound) peaches, halved, pitted
- 750 ml (1 bottle) champagne [or prosecco]
Directions
- To make the peach purée, place water, fresh lemon juice, sugar, and peaches into the Vitamix container in the order listed and secure lid.
- Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
- To make the Bellini, place 2 Tablespoons of the peach purée into champagne flutes and top with 3-4 ounces of sparkling wine. Stir and enjoy!

- The peach purée can be frozen for later use or used for a variety of different cocktails and mocktails.
