Low Fat Waffles
They'll never know these fluffy waffles are low fat! Top with whole-fruit syrup for a simply delicious weekend brunch.
Ingredients
- 95 g (1 cup) oat bran
- 125 g (1 cup) all-purpose flour
- (1½ teaspoon) baking powder
- (2 teaspoons) baking soda
- (⅛ teaspoon) salt, optional
- (4 egg) whites
- 480 ml (2 cups) skim milk
- 40 g (3 Tablespoons) granulated sugar
Directions
- Combine oat bran, flour, baking powder, baking soda, and salt into a large mixing bowl. Set aside.
- Place eggs, milk, and sugar into the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 20 seconds.
- Stop machine. Remove lid and add dry mixture to wet mixture, and replace lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 5 for 15 seconds, using the tamper to press the ingredients into the blades.
