Gluten-Free Bean Flour
An alternative flour for gluten-free cooking made from ground dried legumes.
Ingredients
- 290 g (2 cups) dry garbanzo beans
- 200 g (2 cups) tapioca starch
- 240 g (2 cups) cornstarch
Directions
- Place dry garbanzo beans into the Vitamix container and secure the lid.
- Select Variable 1.
- Start machine and increase to its highest possible speed.
- Blend for 45 seconds.
- Remove to a bowl and add tapioca starch and cornstarch.
- Stir with a whisk to incorporate. Store in an airtight container.
Chef's Notes
For best results, grind 2 cups (400 g) of grains at a time.

- 250 g (2 cups) cornstarch
- 200 g (2 cups) tapioca flour
Directions
- Place chickpeas into the Vitamix container and secure the lid.
- Start the blender on its lowest speed and increase to its highest speed.
- Blend for 45 - 60 seconds or until ingredients are finely ground. In a separate bowl mix all ingredients together until combined.
Chef's Notes
- Use in place of regular flour 1:1 in a recipe.
