Thyme for Tomato Soup

Ingredients

  • 1 ½ cups (360 ml) water
  • 1 can (410 g) plum tomatoes
  • 2 medium roma tomatoes
  • 1 medium (100 g) carrot
  • 2 ½ ounces (70 g) sun dried tomatoes
  • 1 ½ Tablespoons (15 g) onion
  • 1 small garlic clove
  • 1 ½ Tablespoons fresh thyme leaves
  • 1 sprig fresh oregano
  • 1 Tablespoon tomato paste
  • ½ vegetable bouillon cube
  • ½ teaspoon flax meal
  • ½ cup (120 ml) Almond Milk [or whole milk], ml

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 5 minutes 45 seconds.

Chef's Notes

If using jarred oiled sundried tomatoes, use 1 to 2 sundried tomatoes and rinse the excess oil off. Blending will intensify flavor, so when using raw ingredients like onion and garlic, use a small amount as the flavor can be very potent. Substitute vegetable broth for the water and bouillon cube.

  • 1 Tablespoon (100 g) medium carrot
  • 2½ ounce (70 g) sun-dried tomatoes
  • 1½ Tablespoon (15 g) onion
  • 1 small garlic clove
  • 1½ Tablespoon fresh thyme leaves
  • 1 Tablespoon fresh oregano
  • 1 Tablespoon tomato paste
  • ½ Tablespoon bouillon cube
  • ½ teaspoon flax meal
  • ½ cup (120 ml) almond milk , or milk of your choice

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed
  3. Blend for 6 minutes, or until steam escapes the vented lid plug.

  • ½ medium (50 g) carrot
  • 1 ½ ounces sun dried tomatoes
  • ¾ Tablespoon onion
  • ½ small garlic clove
  • ¾ Tablespoon fresh thyme leaves
  • 1 teaspoon fresh oregano
  • ½ Tablespoon tomato paste
  • ¼ vegetable bouillon cube
  • ¼ teaspoon flax meal
  • ¼ cup (60 ml) Almond Milk [or whole milk]

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed
  3. Blend for 7 minutes 30 seconds, using tamper only if needed, until mixture is hot. Serve immediately.
