Parmesan Balsamic Vinaigrette

A tart and tangy dressing or chicken marinade with pleasant cheese overtones.

Parmesan Balsamic Vinaigrette

Ingredients

  • ¼ cup (60 ml) balsamic vinegar
  • 1 lemon, peeled
  • 2 small garlic cloves
  • 6 Tablespoons (20 g) fresh basil leaves
  • ½ cup (40 g) soy parmesan [or parmesan cheese]
  • ½ teaspoon ground black pepper
  • 2 teaspoons salt, optional
  • 1 cup (240 ml) extra virgin olive oil

Directions

  1. Place all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 30 seconds, or until emulsified
