Not-So Cheese Sauce

An almond cream with nacho flavorings, this sauce is great on potatoes, broccoli, and as a dip for chips.

Not-So Cheese Sauce

Ingredients

  • 720 ml (3 cups) water
  • (2 ) lemons, peeled
  • 360 g (2 cups) roasted red pepper [or canned pimientos], peeled, seeded
  • 170 g (1 ⅓ cups) raw or roasted almonds, unsalted
  • (2 teaspoons) onion powder
  • (1 Tablespoon) chili powder
  • 60 g (½ cup) nutritional yeast
  • (1 teaspoon) salt, optional

Directions

Place all ingredients into the Vitamix container in the order listed and secure the lid.

  1. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 5 minutes 45 seconds.
