Vitamix Pizza Soup
Change up the ingredients of this soup as easily as you change up your pizza toppings.
Ingredients
- (1 ) garlic clove
- 80 g (½ medium) onion, peeled, halved
- 40 g (4 ) mushrooms, sliced
- 60 g (½ large) green bell pepper, seeded, chopped
- (1 Tablespoon) extra virgin olive oil
- 360 ml (1 ½ cups) water
- 370 g (3 large) roma tomatoes
- 45 ml (3 Tablespoons) tomato paste
- (1 teaspoon) dried oregano
- (1 teaspoon) dried basil
- (1 teaspoon) ground black pepper
- (¾ teaspoon) salt, optional
- 55 g (½ cup) mozzarella cheese, shredded, optional
- 10 g (2 teaspoons) grated parmesan cheese, optional
Directions
- Sauté garlic, onion, mushrooms, green bell pepper, and one roma tomato in the olive oil until tender.
- Place water, half of the sautéed vegetable mixture, 2 tomatoes, tomato paste, and seasonings into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 4 minutes or until heavy steam escapes from the vented lid.
- Reduce speed to Variable 2 and remove the lid plug. Add remaining half of sautéed vegetables and cheeses through the lid plug opening. Blend for an additional 5 to 10 seconds.
