Spicy Mango Chutney [Food Processor Attachment]

A great dip to go with vegetable chips, a protein or even on a cheese board. This versatile chutney will steal the show.

Ingredients

  • 115 g (½ ) white onion, peeled, cut into large chunks
  • 185 g (¾ cup) roasted red pepper
  • (3 ) garlic cloves
  • 10 g (2 teaspoons) fresh ginger root, peeled
  • (1 ) jalapeño, stemmed, cut into large chunks
  • 775 g (4 cups) fresh mango chunks, peeled
  • (2 ) limes, juiced
  • 60 ml (¼ cup) honey
  • (1 teaspoon) kosher salt, optional
  • 20 g (1 bunch) Italian flat leaf parsley, stems removed, chopped
  • 10 g (1 bunch) fresh mint leaves, stems removed, chopped

Directions

  1. Fit the Food Processor with the Multi-Use Blade. Place onion, peppers, garlic, ginger, jalapeno, mango and lime juice into the Vitamix container and secure the lid.
  2. Pulse 4-6 times to evenly chop ingredients or until desired consistency is reached.
  3. Place into a medium-sized pan over medium heat and add honey and kosher salt. Cook for 25-30 minutes to create a slightly thicker consistency and cook the ingredients together. Chill completely, then stir in fresh chopped mint and parsley.

Chef's Notes

  • If spice is not desired, omit the jalapeno pepper and replace it with a sweet pepper, or omit completely.
