Not-So Cheese Sauce
An almond cream with nacho flavorings, this sauce is great on potatoes, broccoli, and as a dip for chips.
Ingredients
- (1 teaspoon) salt, optional
- 720 ml (3 cups) water
- (2 ) lemons, peeled
- 360 g (2 cups) roasted red pepper [or canned pimientos], peeled, seeded
- 170 g (1 ⅓ cups) raw or roasted almonds, unsalted
- (2 teaspoons) onion powder
- (1 Tablespoon) chili powder
- 60 g (½ cup) nutritional yeast
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes 45 seconds.
