Levantine Cauliflower Hummus

Bursting with flavor from whole toasted spices and fragrant ingredients, this cauliflower hummus is light, creamy, and goes perfectly with fresh vegetables.

Levantine Cauliflower Hummus Hero

Ingredients

  • 35 g (¼ cup) sesame seeds
  • (¼ teaspoon) cumin seeds
  • (¼ teaspoon) ground turmeric
  • (¼ teaspoon) paprika
  • (1 pinch) ground cardamom
  • (¼ teaspoon) coriander seeds
  • 450 g (4 cups) steamed or roasted cauliflower, cut into florets (about 1/2 head)
  • 25 g (½ ) lemon, peeled
  • (1 ) garlic clove, or 1/2 tsp. garlic powder
  • (2 Tablespoons) extra virgin olive oil
  • (1 teaspoon) kosher salt, optional
  • (¼ teaspoon) ground dried sumac
  • (¼ teaspoon) dried mint

Directions

1. Place the sesame seeds, cumin seeds, ground turmeric, paprika, ground cardamom, and coriander seeds into a small skillet set over medium-low heat. Toast until fragrant and aromatic.
2. Once the spices and seeds are toasted, place the cauliflower and all remaining ingredients, including the spice mixture, into the Vitamix container and secure the lid.
3. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute, using the tamper to press ingredients toward the blades.
