Chilled Chai Latte
This light and airy foamed tea beverage coaxes incredible flavors from just a few ingredients.
Ingredients
- 240 ml (1 cup) cold skim milk
- 360 ml (1 ½ cups) brewed chai tea
- 260 g (2 cups) ice cubes, divided use
- (2 pinches) ground cinnamon
- (1 teaspoon) honey [or agave nectar], optional
Directions
- Place milk into the Vitamix Aer Disc container and secure the lid. Start the blender on its lowest speed, slowly increase to Variable 6, and blend for 30 seconds.
- Stop the machine and remove the lid. Add the chai and cinnamon. Secure the lid, select Variable 8, and Pulse 3 to 5 times to incorporate.
- Portion 1 cup of ice into each 16-ounce (480-ml) cup and pour the latte over top.
Chef's Notes
- Important: This recipe only works with cold skim milk. It will not work with 1%, 2%, or whole milk. Likewise, it must be as cold as possible, which, combined with a lower speed, is what helps create the foam.
