Blueberry Coulis

This wholefood dessert sauce is sure to compliment any dessert, or could be used on savory dishes like pork or chicken.

Blueberry Coulis

Ingredients

  • 455 g (1 pound) fresh blueberries
  • 80 g (½ cup) dates
  • (1 Tablespoon) fresh lemon juice

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 5 minutes 45 seconds.

  2. Transfer mixture to Vitamix container and secure the lid.
  3. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
  4. Blend for 30 - 45 seconds or until mixture is smooth.
