Tomato Vinaigrette
Simple. Delicious. And perfect for any fresh salad you’re serving to family or guests. Plus, you can make ahead and store right in the blending container in the refrigerator for later use!
Ingredients
- 2 Tablespoons (30 ml) red wine vinegar
- 1 teaspoon honey
- ⅛ teaspoon ground black pepper
- ¼ teaspoon salt, optional
- 1 teaspoon shallot
- 1 (140 g) roma tomato
- ⅓ cup (80 ml) extra virgin olive oil
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the blade base.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30-40 seconds.
