Avocado Hollandaise

Ideal for drizzling over poached eggs or as a dipping sauce for breakfast toast.

Avocado Hollandaise

Ingredients

  • 1 lemon [or 6 Tablespoons fresh lemon juice], peeled
  • 1 ½ (200 g) avocados, peeled, pitted, quartered
  • 1 ½ cups (360 ml) hot water
  • ¾ teaspoon salt, optional
  • ¾ teaspoon ground black pepper
  • 6 Tablespoons (90 ml) sunflower oil

Directions

  1. Place lemon, avocado, hot water, salt, optional, and pepper into the Vitamix container in the order listed and secure lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades. Blend for 30 seconds.
  3. Reduce the speed to Variable 5 and remove lid plug. Slowly pour the oil through the lid plug opening. Secure lid plug.
  4. Increase speed to its highest speed and blend for an additional 15 seconds, or until desired consistency is reached.
