Enjoy sweet butterscotch chips in each bite of this crisp oatmeal cookie.

Oatmeal Scotchies

Ingredients

  • 2 large egg whites
  • ¼ cup (45 g) Earth Balance margarine
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups (295 g) brown sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt, optional
  • 1 cup (80 g) rolled oats
  • 1 ½ cups (190 g) all-purpose flour
  • ½ cup (110 g) butterscotch chips

Directions

  1. Preheat oven to 350°F (175°C)
  2. Place large egg whites, margarine, vanilla, and brown sugar into the Vitamix container in the order listed and secure lid.
  3. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 20 seconds.
  4. In a large mixing bowl, combine baking soda, salt, oats, and flour.
  5. Stir together the liquid from the Vitamix container into the dry ingredients in the mixing bowl. Add the butterscotch chips.
  6. Drop spoonfuls of dough about 2 inches (5 cm) apart on a cookie sheet sprayed with nonstick spray. Flatten each cookie a little with your hand.
  7. Place in preheated oven and bake for 12-15 minutes or until golden brown.
