Sweet and Spicy Vinaigrette

A sweet and spicy, Thai-inspired dressing, delicious on salads with pea pods, radishes, and shredded carrots, or as a marinade with grilled meats and vegetables.

Ingredients

  • 30 ml (⅛ cup) apple cider vinegar
  • (4 ) dates [or 2 Tablespoons honey], pitted
  • (½ teaspoon) sriracha sauce
  • (½ teaspoon) soy sauce
  • (½ ) garlic clove, peeled
  • (½ piece) fresh ginger root, 1/8" thick
  • (½ teaspoon) ground black pepper
  • 80 ml (⅓ cup) extra virgin olive oil

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the blade base.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed
  3. Blend for 20 seconds.

  • (2 teaspoons) sriracha sauce
  • (2 teaspoons) soy sauce
  • (2 ) garlic clove, peeled
  • (1 piece) fresh ginger root, 1/4" thick
  • (½ teaspoon) ground black pepper
  • 320 ml (1 ⅓ cups) extra virgin olive oil

Directions

  1. Place vinegar, dates, Sriracha sauce, soy sauce, garlic, ginger root and black pepper into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed
  3. Blend for 15 seconds. Reduce speed to variable 5 and remove lid plug.
  4. Slowly pour oil through the lid plug opening in a slow, steady stream. Replace lid plug.
  5. Slowly increase to its highest speed. Blend for 15 seconds or until emulsified.
