Sweet Potato Soup

A delightful combination of apple, carrot, and onion round out the sweet potato in this satisfying soup.

Ingredients

  • ¼ small (45 g) onion, peeled
  • 2 (540 g) sweet potato, cooked
  • 1 medium (200 g) apple, seeded, halved
  • 1 medium (200 g) carrot
  • 3 cups (720 ml) vegetable broth

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 5 minutes 45 seconds.

Chef's Notes

  • Raw onion can be overpowering; if you would like a richer flavor, sauté the onion before blending.Adding cinnamon, nutmeg and other spices creates richness. No need to add sweeteners to this soup as the apple brings a natural whole food sweetness.

  • 1 (270 g) sweet potato, cooked
  • ½ medium (100 g) apple, seeded
  • 1 medium (100 g) carrot
  • 1 ½ cups (360 ml) vegetable broth

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its  highest speed.  Blend for 7 minutes 30 seconds.
