Strawberry Ice Cream

Kick this recipe up a notch by adding a banana, or sneak in zucchini for added nutrition.

Ingredients

  • ½ cup (120 ml) Soy Milk [or milk alternative]
  • ½ cup (120 ml) Coconut Milk
  • ¼ cup (60 ml) date syrup [or honey]
  • ¼ teaspoon vanilla bean paste [or vanilla extract]
  • 1 pound (454 g) whole frozen strawberries

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select the Frozen Dessert program. Start the blender and allow the program to complete, using the tamper to press ingredients toward the blades.
  3. In about 30-60 seconds, the sound of the motor will change and four mounds should form. Stop the machine. Do not over mix or melting will occur. Serve immediately.

Chef's Notes

  • Freeze unused ice cream in an airtight container. When ready to enjoy, allow to soften at room temperature for 10 minutes before serving.
