Strawberry Ice Cream
Kick this recipe up a notch by adding a banana, or sneak in zucchini for added nutrition.
Ingredients
- ½ cup (120 ml) Soy Milk [or milk alternative]
- ½ cup (120 ml) Coconut Milk
- ¼ cup (60 ml) date syrup [or honey]
- ¼ teaspoon vanilla bean paste [or vanilla extract]
- 1 pound (454 g) whole frozen strawberries
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select the Frozen Dessert program. Start the blender and allow the program to complete, using the tamper to press ingredients toward the blades.
- In about 30-60 seconds, the sound of the motor will change and four mounds should form. Stop the machine. Do not over mix or melting will occur. Serve immediately.
Chef's Notes
- Freeze unused ice cream in an airtight container. When ready to enjoy, allow to soften at room temperature for 10 minutes before serving.
