This hearty spread is easy to make and can also be used as a delicious fruit dip.

Ingredients
- 4 cups (600 g) almonds, roasted, unsalted
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades. Blend to your desired texture, blending for another minute will give you a completely smooth almond butter

- If using raw almonds, you will need to add 1/4 cup of oil to create a creamy texture.
- If you choose to roast your own raw almonds, ensure that they are roasted at 350°F for at least 10-15 minutes, and then cooled to room temperature before blending. This toasting, combined with blending on high speed, is what allows the natural oils to be released from inside the nuts, and is vital for creating a smooth texture instead of a paste.
