Sweet Potato Soup
A delightful combination of apple, carrot, and onion round out the sweet potato in this satisfying soup.
Ingredients
- ¼ small (45 g) onion, peeled
- 2 (540 g) sweet potato, cooked
- 1 medium (200 g) apple, seeded, halved
- 1 medium (200 g) carrot
- 3 cups (720 ml) vegetable broth
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes 45 seconds.
Chef's Notes
- Raw onion can be overpowering; if you would like a richer flavor, sauté the onion before blending.Adding cinnamon, nutmeg and other spices creates richness. No need to add sweeteners to this soup as the apple brings a natural whole food sweetness.

- 1 Tablespoon (200 g) medium carrot
