Lion's Tail

Ingredients
- ½ ounce Allspice Dram (See recipe below)
- ¾ ounce fresh lime juice
- Dash of bitters
- 1 teaspoon simple syrup
- 2 ounces bourbon
Directions
- Place all ingredients into a cocktail shaker. Add ice and shake.
- Strain into a glass and garnish with a lime wheel.
Allspice Dram:
Ingredients
- 50 grams whole allspice berries
- 6 black peppercorns
- 10 whole cloves
- 1 cinnamon stick
- 1 whole nutmeg
- 225 ml 151° rum
- 300 grams granulated sugar
- 300 ml water
Directions
- Preheat oven to 425°F. Place allspice, peppercorn, cloves, cinnamon, and nutmeg on a baking sheet and roast for 10-15 minutes, or until fragrant.
- Transfer roasted spices to the Vitamix container and secure lid.
- Select Variable 1.
- Start machine and slowly increase to its highest speed.
- Blend for 15 seconds, or until finely ground.
- Stop machine and add rum to the Vitamix container.
- Select Variable 1.
- Start machine and slowly increase to its highest speed.
- Blend for 10 to 15 seconds.
- Combine sugar and water to make simple syrup. Using a superfine chinois, strain blended allspice mixture into the syrup. Pour the liquid through a funnel into a glass bottle.
