Winter Spice Vinaigrette

Roasted garlic add depth of flavor to this wintery dressing.

Ingredients

  • ¾ cup (180 ml) apple cider vinegar
  • 2 Tablespoons (30 ml) Dijon mustard
  • 8 roasted garlic cloves
  • 1 small (30 g) shallot, peeled, roasted
  • 3 medjool dates, pitted [or honey to taste]
  • 1 Tablespoon Winter Spice Seasoning
  • 1 sprig fresh rosemary, leaves
  • 2 cups (480 ml) extra virgin olive oil

Directions

  1. Place all ingredients except olive oil into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
  3. Blend for 30 seconds.
  4. Reduce to Variable 6, remove lid plug and add oil through lid plug opening.
  5. Replace lid plug and blend an additional 10 seconds.

  • ½ small (20 g) shallot, peeled, roasted

  • 1 ½ cups (360 ml) extra virgin olive oil
