Warm Balsamic Potato Salad
Hold the mayo for this one; balsamic vinegar and olive oil flavor this salad of roasted potatoes, caramelized onion, and fresh basil.
Ingredients
- ⅓ cup (80 ml) balsamic vinegar
- ¾ cup (180 ml) extra virgin olive oil
- 1 garlic clove
- 1 Tablespoon Dijon mustard
- 1 pinch salt, optional
- 1 pinch ground black pepper
- 3 pound (1.3 kg) red potatoes, diced and roasted
- 1 medium onion, sliced and caramelized
- ¾ pound (345 g) roma tomatoes
- ½ cup (10 g) fresh basil leaves
Directions
- Place vinegar, olive oil, garlic and mustard into the Vitamix container in the order listed and secure lid.
- Start the blender on its lowest speed then increase to its highest speed. Blend for 30 seconds.
- Place warm potatoes, caramelized onion, tomatoes, and basil in a bowl. Drizzle blended vinaigrette over the vegetables and toss to combine.
