Pho

This healthy Vietnamese noodle soup has a rich base of beef broth, complemented by ginger, star anise, and basil. The garnishes also are spectacular, from scallions and cilantro, to sirloin and pho noodles.

Ingredients

  • 4 cups (960 ml) beef stock
  • ½ medium (75 g) onion
  • 1 Tablespoon (5 g) fresh ginger root, peeled
  • 1 teaspoon kosher salt, optional
  • 1 whole star anise
  • 2 Tablespoons fish sauce
  • 1 Tablespoon dried basil
  • Garnish:
  • beef sirloin, sliced thinly
  • cup fresh cilantro leaves
  • rice noodles, cooked
  • Tablespoon green onion, sliced

Directions

  1. Place all ingredients except garnishes into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes 45 seconds.
  3. To serve, pour 12 ounces (360 ml) of broth into a bowl and garnish as desired.

Chef's Notes

  • For some other fun pho toppings, try using sliced tofu, shredded carrots, bok choy, bean sprouts, or a squeeze of fresh lime juice.
