Lime Curd

This bright lime curd is beautiful on tarts and pastries, and you can easily substitute lemon for the lime zest.

Ingredients

  • ½ cup (120 ml) fresh lime juice
  • 5 large eggs
  • ¼ cup (60 ml) honey
  • ⅛ teaspoon salt, optional
  • 4 Tablespoons lime zest
  • ½ cup (115 g) unsalted butter

Directions

  1. Place juice, eggs, honey, salt, and lime zest into the Vitamix container in the order listed and secure lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 5 minutes 45 seconds.
  3. Add butter, 1 piece at a time, through the lid plug opening incorporating butter completely between additions.  Replace the lid plug and slowly increase the speed its highest speed.  Blend for 30 seconds.  Chill before serving or allow to cool slightly and serve at room temperature.
