Gluten-Free Date Nut Bars
Dates and orange lend a fruity flavor to these bars, while walnuts provide a little crunch.
Ingredients
- 1 cup (115 g) walnuts
- ¾ (110 g) dates
- 1 Tablespoon orange zest
- 3 large eggs
- ½ cup (100 g) granulated sugar
- ¼ cup (60 ml) orange juice
- ½ teaspoon ground cinnamon
Directions
- Preheat oven to 350°F (175°C). Grease an 8 inch square baking pan.
- Place walnuts in the Vitamix container and secure lid. Start the blender on its lowest speed, then quickly increase to Variable 4, using thetamper to press ingredients toward the blades. Blend for 10 seconds. Remove to a bowl and stir in the dates delete and orange zest.
- Place eggs, sugar, orange juice and cinnamon into the Vitamix container in the order listed and secure lid.
- Start the blender on its lowest speed, and slowly increase to its highest speed. Blend for 15 seconds.
- Add the mixture to the bowl with the walnuts and dates and stir to combine.
- Place in preheated oven and bake for 30 minutes or until a toothpick comes out clean. Allow to cool thoroughly before slicing.
