Chestnut Ice Cream
Roasted chestnuts evoke feelings of the holiday season, and this ice cream is a cool twist on traditional flavors.
Ingredients
- 1 ½ cups (200 g) chestnuts, roasted
- 1 ½ cups (360 ml) plain dairy free yogurt [or low fat vanilla yogurt]
- 15 (105 g) dates, pitted
- 6 cups (780 g) ice cubes
Directions
- Place chestnuts, yogurt and dates in to the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades. Blend for 30 seconds creating a very smooth base. Stop the machine.
- Add ice and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades. Blend for 20 seconds.
