Berry Winter Spice Sauce

A splash of this bright flavorful sauce will give you that feeling of a profession chef.

Ingredients

  • ¼ cup (60 ml) apple cider vinegar
  • 3 cups (420 g) fresh cranberries [or equal parts black & blueberries]
  • 2 teaspoons Winter Spice Seasoning
  • ¼ cup (80 g) dates [or honey], pitted
  • ½ cup (120 ml) extra virgin olive oil [or water]

Directions

  1. Place vinegar, berries, Winter Spice Seasoning, and sugar into the Vitamix container in the order listed and secure the lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 5 minutes 45 seconds.
  3. Once stopped, carefully remove the lid plug.  Start the blender and slowly increase to Variable 5.
  4. Pour olive oil in through the lid plug opening. Replace the lid plug and blend an additional 10 seconds.

Chef's Notes

  • If no fresh berries are available, frozen (then thawed) berries may be substituted.
