Dairy alternative milks are made by blending nuts, coconut, rice or soybeans with water. The mixture is then strained through a fine-mesh sieve (lined with cheesecloth for the smoothest results) over a large bowl to filter out the solids, or through Vitamix’s reusable filtration bag. Use the milks as-is, or add vanilla extract, sweetener, or salt to taste for added flavor. The milks will keep up to three days in the refrigerator.

How to Make Homemade Nut Milk
Almond Milk
Homemade almond milk is free of preservatives and can be used for cooking, baking, pouring over cereal, or adding to coffee.
Ingredients
- 3 cups (720 ml) water
- 1 cup (140 g) raw almonds, soaked overnight
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 45 seconds or until desired consistency is reached.
- Store in refrigerator. Shake well before using.
Oat Milk
Oat Milk is a delicious and creamy, nut-free alternative to traditional plant-based milks. You can customize the taste of this dairy free milk by adding dates, vanilla extract, salt, or all three if you desire.
Ingredients
- 6 cups (1.4 l) cold water
- 1 cup (180 g) soaked steel cut oats
Directions
- Place water and soaked oats into the Vitamix container and secure the lid.
- Select Variable 1.
- Start machine and increase to its highest speed.
- Blend for 1 minute and 30 seconds.
- Remove and strain if desired.
Cashew Milk
Create fresher, more flavorful cashew milk at home. This recipe yields 4 1/2 cups of milk from just 1 cup of nuts.
