Walnut Date Bread

A sweet combination of pitted, chopped dates and walnuts adds wonderful texture to this soft, homemade bread.<br>

Ingredients

  • 1 cup (240 ml) hot water
  • 2 ¼ cups (300 ) dates, pitted, chopped
  • 4 Tablespoons (55 g) unsalted butter
  • 1 ½ cups (125 g) walnuts
  • 2 large (2 large) eggs
  • ½ teaspoon (5 teaspoons) vanilla extract
  • 1 cup (125 g) whole wheat flour
  • 1 cup (125 g) all-purpose flour
  • 165 (0.75 cup) granulated sugar
  • 1 teaspoon (1 teaspoon) baking powder
  • ½ teaspoon (0.5 teaspoon) baking soda
  • ½ teaspoon (0.5 teaspoon) salt, optional

Directions

  1. In a large mixing bowl add dates and butter pour hot water over them.  Let stand about 30 minutes.
  2. Heat oven to 160°C (325°F) with rack in middle position.  Lightly grease loaf pan; set aside.
  3. Place walnuts into the Vitamix container and secure lid.
  4. Select Variable 1.
  5. Start the machine and slowly increase speed to Variable 3 and blend for 10 to 15 seconds or just until the walnuts are coarsely chopped.  Do not over process.
  6. Remove chopped nuts; set aside.
  7. Place the flours, sugar, baking powder, baking soda, and salt, optional into the same Vitamix container and secure lid.
  8. Select Variable 1.
  9. Start the machine and slowly increase speed to Variable 6 and blend for 15 seconds.  Combine with chopped nuts in a medium bowl.
  10. Stir eggs and vanilla into the cooled date mixture, and then stir into the flour/nut mixture just until combined.  Do not over mix.
  11. Spread evenly in loaf pan and bake until a toothpick inserted into the centre comes out clean, about 1 hour to 1 hour 10 minutes.
  12. Cool bread in pan on a wire rack for 25 minutes, then turn out onto rack and cool completely.

  • 1 cup (120 g) whole wheat flour
  • 1 cup (125 g) all-purpose flour
  • ¾ cup (150 g) granulated sugar
  • 1¼ cup (125 g) walnuts
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 large eggs
  • ½ teaspoon vanilla extract

Directions

  1. Pour boiling water over dates and butter in a large mixing bowl. Let stand until cool, about 30 minutes.
  2. Heat oven to 160°C (325°F) with rack in middle position. Lightly coat a 23 cm x 13 cm (9-inch x 5-inch) loaf pan with cooking spray.
  3. Place flours, sugar, walnuts, baking powder, bicarbonate of soda, and salt into the container and secure lid.
  4. Select Low speed.
  5. Use the On/Off switch to quickly pulse 10 to 15 times. Transfer to a large-size mixing bowl.
  6. Whisk eggs and vanilla into the cooled date mixture, pour into dry ingredients and mix gently by hand to combine.
  7. Transfer mixture to prepared loaf pan, spreading evenly. Bake until a toothpick inserted into the center comes out clean, about 1 1/4 to 1 1/2 hours.
  8. Cool bread in pan on wire rack for 25 minutes, then turn out onto rack and cool completely.

Chef's Notes

Use kitchen scissors, dipped often in hot water, to coarsely chop dates. Please refer to our dry grain grinding chart for more details on grinding whole wheat flour.
