Vegan Truffles

With just a few simple ingredients, these guilt-free vegan truffles are the perfect addition to any dessert spread.

Ingredients

  • ⅓ cup (80 ml) soy milk
  • 1 cup (140 g) almonds
  • ¾ (130 ) dates
  • 2 Tablespoons (30 ml) agave nectar
  • 1 Tablespoon (1 Tablespoon) cocoa powder
  • ¼ cup (40 g) coco wheats

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Start the machine and slowly increase to its highest speed.
  4. Blend for 1 minute, using the tamper to press the ingredients into the blades. Consistency should be thick like dough. If too thick, adjust by adding more milk.
  5. Form into 1-inch (2.5 cm) balls and freeze.
