Tomato Vinaigrette

Simple. Delicious. And perfect for any fresh salad you’re serving to family or guests. Plus, you can make ahead and store right in the blending container in the refrigerator for later use!

Ingredients

  • 2 Tablespoons (30 ml) red wine vinegar
  • 1 teaspoon honey
  • ⅛ teaspoon ground black pepper
  • ¼ teaspoon salt, optional
  • 1 teaspoon shallot
  • 1 (140 g) roma tomato
  • ⅓ cup (80 ml) extra virgin olive oil

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the blade base.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30-40 seconds.

  • 1 Tablespoon red wine vinegar
  • ½ teaspoon honey
  • 1 pinch ground black pepper
  • ⅛ teaspoon salt, optional
  • ½ (70 g) roma tomato
  • ½ teaspoon shallot
  • 3 Tablespoons (45 ml) extra virgin olive oil

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure blade base.
  2. Place all ingredients into the Vitamix container in the order listed and secure the lid.  Start the blender on its lowest speed, then quickly increase to its highest speed.  Blend for 35 seconds.

  • ¼ cup (60 ml) red wine vinegar
  • 2 teaspoons honey
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt, optional
  • 2 (285 g) roma tomatoes
  • 2 teaspoons shallot
  • ⅔ cup (160 ml) extra virgin olive oil

Directions

  1. Place all ingredients except the oil into the Vitamix container in the order listed except the olive oil and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 35 seconds.    Reduce the speed to Variable 4.  Remove the lid plug and slowly add the oil through the lid plug until emulsified.

  • 1 teaspoon salt, optional
  • 4 (570 g) roma tomatoes
  • 4 teaspoons shallot
  • 1 ¼ cups (300 ml) extra virgin olive oil

Directions

  1. Place all ingredients except the oil into the Vitamix container in the order listed except the olive oil and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 35 seconds, using the tamper to push ingredients toward the blades.  Reduce the speed to Variable 4.  Remove the lid plug and slowly add the oil through the lid plug until emulsified.
