Taco Soup

Change up your Taco Tuesday with this quick and easy taco soup.

Taco Soup

Ingredients

  • For the Soup:
  • 1 (225 g) red bell pepper, seeded, 1/4 reserved and diced
  • ⅛ (35 g) red onion
  • 1 can (312 g) corn kernels, drained, reserve 1/2
  • 3 (325 g) roma tomatoes
  • ½ small jalapeño, seeded
  • 2 Tablespoons (15 g) Homemade Taco Seasoning
  • 3 cups (720 ml) vegetable stock
  • Add-in Ingredients:
  • ½ bunch (15 g) fresh cilantro leaves
  • ½ cup (30 g) tortilla chips, about 12 chips
  • ¼ cup (20 g) cheddar cheese, shredded, optional

Directions

  1. Place all ingredients for the soup into the Vitamix container in the order listed and secure the lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 7 minutes 30 seconds. When finished blending start the blender and increase to Variable 3. Add the add-in ingredients along with the extra red pepper and corn through the lid plug opening and blend for 15 seconds to chop.

Chef's Notes

  • If you have a can of Ro-tel in the cabinet, use this instead of the tomatoes and jalapeno.
  • If you would like seasoned beef or chicken in your soup, add it in with the tortillas and cilantro.
