Strawberry Purée
This strawberry purée can be used as a sauce or topping for a multitude of desserts, from strawberry cake to cheesecake, or even layered custard.
Ingredients
- ½ cup (120 ml) water
- ¼ lemon, peeled
- 1 pound (454 g) strawberries, stemmed
- 6 (90 g) pitted dates [or 1/4 cup honey, optional]
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
Chef's Notes
- Depending on how ripe and sweet your strawberries are, no dates or honey may need to be added in order to achieve a sweet strawberry purée.
