Soyannaise

A satisfying variation of classic mayonnaise, this easy-to-make recipe includes tofu as its main ingredient.

Ingredients

  • 2 ¼ ounces (70 g) water
  • 1 cup (150 g) tofu
  • 3 Tablespoons (45 ml) extra virgin olive oil
  • 1 Tablespoon (1 Tablespoon) fresh lemon juice
  • 1 teaspoon (1 teaspoon) dry mustard
  • 1 teaspoon (1 teaspoon) honey
  • ¼ teaspoon (0.25 teaspoon) salt, optional
  • ⅛ teaspoon (0.12 teaspoon) ground black pepper

Directions

  1. Combine all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Start the machine, and slowly increase to its highest speed.
  4. Blend for 40 to 45 seconds or until smooth and creamy.
