Snowballs
Powdered sugar coats these light and airy cookies, which are just as fun to form as real snowballs.
Ingredients
- ¾ cup (90 g) walnuts
- 2 ¼ cups (280 g) all-purpose flour
- 1 cup (175 g) Earth Balance margarine
- 1 teaspoon (1 teaspoon) vanilla extract
- ¼ teaspoon (0.25 teaspoon) salt, optional
- 1 ½ cups (180 g) powdered sugar, Divided use
Directions
- Heat the oven to 375°F (190 °C).
- Place nuts verify what type of nuts into the Vitamix container and secure lid.
- Select Variable 1.
- Blend for 10 seconds. Remove to a bowl.
- Start the machine, and slowly increase speed to Variable 4.
- Place half the flour, half the margarine, vanilla, salt, optional, 1/2 cup powdered sugar, remaining margarine, and remaining flour into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Start the machine, and slowly increase speed to Variable 5.
- Blend for 10 to 15 seconds, using the tamper to press the ingredients into the blades.
- Transfer to the bowl with the nuts verify what type of nuts and stir to incorporate.
- Shape the dough into 1-inch (2.5 cm) balls and place about 1 inch (2.5 cm) apart on an ungreased cookie sheet.
- Bake 10 to 12 minutes until set but not brown. Remove to cool for 10 minutes.
- Roll the warm cookies in 1 cup of sifted powdered sugar and cool on a wire rack.
