Shiitake Blended Burger
You would never know that this burger is 50% mushroom. Traditional burger flavor comes through with no texture changes.
Ingredients
- For the Burger:
- ¾ pound (340 g) shiitake mushrooms, stemmed
- 1 small jalapeño, stemmed
- 1 medium (30 g) shallot, peeled
- ½ teaspoon salt, optional
- ¼ teaspoon ground black pepper
- 1 garlic clove
- ¾ pound (340 g) 80/20 ground beef
- Toppings:
- ¼ cup (5 g) arugula
- ¼ cup (50 g) pickled turnips
- 5 Tablespoons (75 ml) Harissa Aioli
- 9 whole grain bun, slider size
Directions
- Place the mushrooms, salt, pepper, jalapeno, shallot, and garlic into the Vitamix container and secure the lid. Start the blender on its lowest speed, then quickly increase to Variable 7. Blend for 30 seconds, using the tamper to push ingredients toward the blades.. Fold mushroom mixture into the ground beef. Form into nine 3 oz. patties.
- To cook, heat a large skillet over medium-high heat. Add 1 Tablespoon of oil to the pan and place burger patties into the pan (do not over crowd the pan). You may cook two at a time. Sear 3 minutes on each side and then place in 400°F (200°C) for about 15 minutes or until desired doneness.
- To serve: Toast bun, smear aioli on bun, place burger on bun, and top with arugula and pickled turnips.
