Salmon Burgers
Simple ingredients make up this satisfying, gluten-free salmon burger.
Ingredients
- ½ medium (80 g) yellow onion, peeled, cut into large chunks
- ½ medium (80 g) red bell pepper, cut into large chunks
- 4 cloves roasted garlic
- ½ cup (10 g) fresh parsley leaves
- 2 Tablespoons (30 ml) whole grain mustard
- ¼ cup (60 ml) Homemade Mayonnaise
- ½ cup (60 g) chickpea crumbs
- 1 teaspoon fresh dill [or 1/4 teaspoon dried]
- ½ teaspoon salt, optional
- 4 lemon peel
- 1 ½ pound (680 g) salmon fillet
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 7. Pulse 10 – 12 times or until everything is evenly chopped. Using the tamper to press ingredients into the blades. Portion into 3 oz. (85g) patties and cook as desired.
