Salmon Burgers

Simple ingredients make up this satisfying, gluten-free salmon burger.

Salmon Burger

Ingredients

  • ½ medium (80 g) yellow onion, peeled, cut into large chunks
  • ½ medium (80 g) red bell pepper, cut into large chunks
  • 4 cloves roasted garlic
  • ½ cup (10 g) fresh parsley leaves
  • 2 Tablespoons (30 ml) whole grain mustard
  • ¼ cup (60 ml) Homemade Mayonnaise
  • ½ cup (60 g) chickpea crumbs
  • 1 teaspoon fresh dill [or 1/4 teaspoon dried]
  • ½ teaspoon salt, optional
  • 4 lemon peel
  • 1 ½ pound (680 g) salmon fillet

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 7. Pulse 10 – 12 times or until everything is evenly chopped.  Using the tamper to press ingredients into the blades. Portion into 3 oz. (85g) patties and cook as desired.
