Red Pepper Curry Soup

Ingredients

  • 2 cups (340 g) roasted red peppers
  • ¼ (20 g) onion
  • 1 teaspoon coriander seeds
  • 1 teaspoon (3 g) fresh ginger root
  • 1 can (280 g) crushed tomatoes
  • ½ can (150 g) coconut milk
  • 1 ½ Tablespoons gochujang
  • ½ teaspoon kosher salt, optional
  • ½ teaspoon ground black pepper

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its  highest speed.  Blend for 7 minutes 30 seconds.

Chef's Notes

  • Many traditional store bought and restaurant soups are laden with added salt.  Making this recipe at home, you get to control the salt and you will probably find that with so many other big bold flavors in this recipe, you might not need as much salt as you thought!Red peppers are rich in fiber, which can help you feel full and satisfied. They're also a good source of carotenoids and vitamin C, which are both plant compounds that act as antioxidants.
