Pineapple Salsa

Pineapple adds a burst of color and flavor to this salsa. You can serve it hot or mild with blue corn chips, or as a topping on grilled fish.

Ingredients

  • 2 Tablespoons (30 ml) extra virgin olive oil, optional
  • ¼ (300 g) pineapple, peeled, cut into large chunks
  • ½ small (80 g) white onion, peeled, halved
  • 1 (150 g) red bell pepper, seeded, cut into large chunks
  • 2 Tablespoons fresh cilantro leaves, packed
  • ½ lime, peeled
  • 1 small (15 g) jalapeño, seeded if desired
  • ½ teaspoon kosher salt, optional

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 3. Pulse 10 to 20 times using the tamper to press ingredients towards the blades, until desired consistency is reached.
