Pineapple Salsa
Pineapple adds a burst of color and flavor to this salsa. You can serve it hot or mild with blue corn chips, or as a topping on grilled fish.
Ingredients
- 2 Tablespoons (30 ml) extra virgin olive oil, optional
- ¼ (300 g) pineapple, peeled, cut into large chunks
- ½ small (80 g) white onion, peeled, halved
- 1 (150 g) red bell pepper, seeded, cut into large chunks
- 2 Tablespoons fresh cilantro leaves, packed
- ½ lime, peeled
- 1 small (15 g) jalapeño, seeded if desired
- ½ teaspoon kosher salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 3. Pulse 10 to 20 times using the tamper to press ingredients towards the blades, until desired consistency is reached.
