Lychee Mango Smoothie

This tropical smoothie gets its unique sweetness from the lychee fruit.

Lychee Smoothie

Ingredients

  • 1 cup (240 ml) soy milk
  • 2 dates [or 1 Tablespoon honey], pitted
  • ½ can (130 g) lychees, drained
  • ½ cup (75 g) frozen mango chunks
  • 1 cup (130 g) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Smoothie Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40–50 seconds, using the tamper to push ingredients toward the blades.

  • Finding lychees may be hard—try a local Asian grocery store and you will find them on the shelf.
  • This smoothie is a deliciously nutritious way to hydrate and nourish your body. Soy milk provides a creamy base, packed with plant protein and essential vitamins, making it a heart (and whole body!) healthy choice.
