Lemon Cashew Hollandaise

This bright sauce will give your roasted vegetables a creamy finish.

Hollandaise

Ingredients

  • 1 cup (240 ml) water
  • 1 small (60 g) carrot
  • ½ cup (75 g) raw cashews
  • 1 slice (10 g) onion
  • 2 Tablespoons (15 g) nutritional yeast
  • 1 teaspoon Dijon mustard
  • 1 lemon, peeled
  • ½ teaspoon salt, optional
  • ¼ teaspoon ground black pepper

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its  highest speed.  Blend for 7 minutes 30 seconds.
