Crunchy Topping
This crunchy, whole wheat flour topping is delicious on top of coffee cake or baked apples.
Ingredients
- ¼ cup (55 g) dark brown sugar, packed
- 2 Tablespoons whole wheat flour
- 1 teaspoon ground cinnamon
- 2 Tablespoons light butter spread
- ¼ cup (25 g) pecans
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4.
- Blend for 5-10 seconds or until mixture resembles coarse crumbs. Stop and scrape sides with spatula.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4. Blend for 5 seconds. Crumble mixture over the batter in the pan and bake according to directions. (refer to Coffee Cake)

Tops one 9-inch coffee cake. Use over ice-cream, yogurt or your favorite dessert.
