BLT Salad
A delicious blend of sweet, salty and fresh citrus flavors.
Ingredients
- ⅓ cup (80 ml) milk
- 1 lemon peeled, halved
- 1 (200 g) avocado, halved, seeded, peeled
- 3 green onions, root trimmed
- ¼ teaspoon salt, optional
- ¼ teaspoon ground black pepper
- 1 teaspoon hot sauce
- 1 cup (240 ml) plain Greek yogurt
- 4 cups (190 g) romaine lettuce
- 4 tomatoes quartered
- ½ pound (225 g) bacon, cooked, crumbled
- croutons for garnish
Directions
- Place milk, lemon, avocado, green onions, salt, pepper and hot sauce into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 35 to 40 seconds or until ingredients are well blended, using the tamper to press the ingredients into the blades.
- Stop machine. Remove lid and scrape the sides of the container.
- Add yogurt and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 10 seconds or until ingredients are well blended.
Chef's Notes
To serve, arrange salad ingredients on 6 to 8 individual plates or toss in a large salad bowl. Serve with vinaigrette.
